Audrey Adellon’s Zero Waste Okara Cookies Recipe

Ingredients: 

  • 100g flour 
  • 100g almond okara 
  • 60g sugar 
  • ½ baking powder
  • 40ml coconut oil 
  • 25g almond milk

Instructions: 

1. Preheat the oven at 180°C (356F) 

2. Mix the flour, sugar and baking powder. 

3. Then add the okara and coconut oil. Work the dough with your fingertips into a ball. If the consistency is sandy, your okara has been well drained. In this case, add the almond milk until you get a cookie dough type dough. 

4. Form little balls of about 25g in your hands, then crush them on a baking tray covered with baking paper. 

5. Bake for 10 to 12 min for a soft version. Leave to cool and enjoy. 


Tips:

You can add, for a tastier and gourmet aspect, 40g of chopped dark chocolate in the 3rd step.
