Audrey is someone that has a million questions to ask. Always a new idea popping into her head! You would think with that many ideas she would be disorganised but far from that. Her motto in life: why do I need sleep? 

Growing up in France helped her understand how spending time at the table is primordial to life, how food is not just to feed your body but can become a passion. Cooking is not only colours and smells. It’s a question of transforming recipes into images and feelings. Food for her is art. This is why she pursued her studies in both graphic and food design. Traveling made her aware that there was more than just French cuisine, which elaborated her thirst for discoveries and made her a “fearless taster”.


This is our first post for our new series of guest cooks sharing their favourite no waste recipes. When Audrey contacted me with this recipe, I thought it was an amazing opportunity to share these lovely ‘Aha’ moments that home cooks might have when they experiment with what is left in their kitchen. It reminds me of this inspiring ad by Hellmann’s and Ogilvy about cooking what is left in your pantry!

What is your motivation?

I believe that food and tables are one of the oldest means of communication that exist. Food brings us so much! To revel is a combination of personal satisfaction, childhood memories, meetings with friends and family. It is, in a sense, the very essence of human existence.

I want to break the individualistic era that we are in, to bring lovers, friends, families together to reconnect around a universal and simple value. I want to ignite curiosity in people’s minds. I want people to realize that playing with food can help shape a new culture of eating. I want to awaken people by getting them to use the full power of the senses.


How did you come about this recipe?

Once I was having a very interesting conversation with a friend, who created DIY courses a few years ago, I discovered what okara was.

I then tried a recipe of almond milk so as to get my own okara. But then I had this homemade product, I didn’t know what to do with it. Thinking of anything that I could bake, cook and create, I tried an okara cookie recipe I hope you’ll like as much as I do.

It’s tasty and you know what? It’s also a zero waste recipe!
